Apply ghee in plain tray and keep aside.
Remove the skin from the boiled palm sprouts and cut into small pieces.
In a mixer jar, grind the palm sprouts along with the cardamom to a coarse mixture(grated coconut consistency).
In a heavy bottom pan, heat 1 tbsp ghee and add the palm sprouts mixture and saute well for 10 mins in medium flame.
Then add sugar and a little water and mix well.
Saute well until the palm sprouts gets thickened.
Finally add the remaining ghee and stir well for a further 5 minutes.
After that remove from pan and spread it in the tray.
Then sprinkle the chopped pistachios and cut into the desired shape.
Healthy Palm Sprouts Burfi is ready.
